Simple Egg Muffin Recipe

Ladies (and gentlemen, maybe), welcome to the #titasofmanila side of this blog, where I trade some of my precious waking hours to puttering around the kitchen, instead of just grabbing a box of cereal and pouring milk. I actually like being in the kitchen now, and I'm closer to finishing an entire meal of five courses. I'm just looking for the perfect time to do that.

Today, I'm sharing with you one of my simple recipes for breakfast. One of the birthday gifts I received last 2014 is a 28L tabletop oven, which is one of my favorite gifts ever. I've taken to baking food since, like fish and scallops. My recent discovery, Simple Egg Muffins, are super yummy though and need to be shared. They're lean, and #balikalindog ready, too!

  • Chopped tomatoes as required

  • Spring onion as required

  • Onion as required

  • Cheese as required

  • Green chillies

  • Fresh coriander

  • You can add chicken or other lean meats, spinach, ricotta cheese, bell peppers, and lots more as per your taste. I used ground pork on mine + sharp cheddar.

  • Eggs 6 beaten with 2 tbsp milk, black pepper to taste. I used fresh cream on my version above.

How to cook:

  • Beat the eggs and add the cream.

  • Preheat the oven at 200C. Grease the pan.

  • Add the assorted ingredients to the muffin pan. Add your choice of spices {I used paprika, a bit of salt, black pepper}

  • Pour the eggs and cream to the pan.

  • Bake the muffins for 20-25 minutes, until the muffins are fluffed up.

  • Serve and enjoy!
